Project details

We persuaded the client to follow the “kitchen of the future” concept by examining each item of cooking equipment, understanding it and replacing it with more efficient equipment.

Our design addresses energy conservation in complex, high energy kitchen systems in an innovative way, bringing a new level of environmental performance to catering.

The building’s overall energy performance consumes less than half the energy of a similar building constructed to good practice standards.

Brief

  • create eight student kitchens which require cooking equipment densities that are considerably higher than those found in commercial kitchens

Results

  • a kitchen without precedent
  • a displacement ventilation system, not used before in a kitchen environment, replaces traditional air conditioning
  • CIBSE Sustainable Building Services Design Award
